A Working Mans French Toast


Bubba's favorite Breakfast is French Toast. Hence the "Working Man" reference/joke.
Today I'm sharing his favorite French Toast Recipe.

What You'll Need:
4 Eggs
1 Teaspoon Sugar
1 Teaspoon Cinnamon
1 Cup Milk
a dash of Salt
10-12 Slices of bread
(1 tblspn of Butter for the frying pan).

How to do it:
Combine all ingredients except for the bread and the butter in a mixing bowl. Stir well.
Turn on your frying pan and add butter or pam. Once heated, dip the bread into the mix and cook on medium heat. Once cooked, top with your favorite ingredients. Bubba likes it plain with syrup, and I love to add fruit and powdered sugar!
Now sit down, and enjoy your breakfast!

The Blog Meetup was a Success! It was so great to meet all the gals that came down. We enjoyed food, chatting, laughs and serious blog talk.
I was really surprised at how far some of the gals drove to come down. That really made the event feel so special!

College Woes and Campus Book Rentals


I've been going to school for some time now. After working on my EMT Intermediate, I've been working on General Eds for the Nursing program over the last few years. Let me take a moment to rant about College.

Guys, the expenses, whoa. I mean, last semester was out of this world pricey. I finally took the time to do the math on the cost of education, after you subtract the utilities, it ends up being about $10 an hour. Pricey? Yep. Reasonable, yeah, I guess I have to admit it.

Whats worse are the books. The books that the college refuses to use more than a year at a time, that the used versions sell out quickly, that you probably won't even really use? Yeah. That part REALLY sucks.
So when I first read about Campus Book Rentals I was so excited to learn more about them!

These guys rock, seriously, look at this list of perks:
- You can save anywhere from 40-90% off the college bookstore prices. Guys, that is HUGE.
- Free shipping BOTH WAYS, and the renting periods are flexible!
- They let you HIGHLIGHT in the books!
- (My favorite) They donate to Operation Smile with every textbook rented!

Awesome, right?
Well, it does get better. They have the Rent Back Program! Rent Back allows students to rent the textbooks we already own to other students, which in turn, makes YOU (the student) 2-4 times more money compared to the other buyback options (which can be a real pain in the rear).

Please, if you're a college student, go check them out! I promise you won't be sorry. I sure wasn't!
And after you're done, get back to your homework! Midterms is next week!

Mani Monday: Follow me on Glitter

I have a confession to make.
I'm a bargain shopper when it comes to nail polish. I refuse to pay full price for most brands. So when I walked into Ulta and realized they had big name brand polishes on clearance for $1, I lost my cool.
Another confession: I really don't want to admit that this is a Kardashian Brand product... but technically, it's OPI, so I don't have to judge myself too harshly.


Its black and glitter for petes sake!
And I love it!

Buffalo/Chipotle Dorito Crockpot Chicken


So you've seen Cheddar Dorito Chicken. And I've done the cool ranch Dorito Chicken. But Buffalo/Chipotle? Yeah, I went there

This is a perfect meal if you want something spicy, flavorful, hot and EASY.

What you'll need:
2-3 chicken breasts
1 brick of cream cheese
1 can cream of chicken soup
1/3 cup (or more) buffalo sauce
Chipotle Doritos

Combine all but the Doritos in a crockpot. Cook on high for 4 hours, or low for 8 hours.Add Dorito crumbs halfway through cooking if desired, but will not change the flavor.
Once cooked, switch to keep warm. Crush doritos in a bowl and add cheese and Dorito crumbs as desired. Let sit long enough for the cheese to melt.

Planet Play for the Birthday Day

Little dudes birthday was actually on Thursday. We really wanted to do something fun, and since I had the next day off work, we really wanted to go "all out". Well, as all out as you can with a one-year-old.

My Oma wanted to go to lunch/dinner with us to celebrate, so we agreed on Sizzler. I shared the salad bar treats with the little man, who decided that he didn't want to share... he wanted it all.
So he pouted while I couldn't share it fast enough.

We crammed too much into that day. After linner, I had to go to class to take a math test. Nothing like doing it all and then some! Luckily, class was just a pit stop.
Then we went to Planet Play, in Draper to meet up with Grandma, Grandpa, Omie and Opa.


He couldn't wait to start playing. And honestly, neither could daddy.


Surprise! Aunt Carebear came along too (because she couldn't make it to his party on Saturday). We had lots of fun playing the games.

Have you ever heard of mini-bowling? Its made just for little kids. Brayden could pick up the ball, throw it and all! He LOVED IT!


They also had "Tiny Town" with rides made just for the little ones. Brayden really loved the rides, like the merry-go-round and the cars!


In the end, we used our tickets won to buy Brayden some treats from the prize store. He picked out a red spiked bouncy ball that he hasn't put down yet.


Needless to say he fell asleep as soon as his little body hit the carseat. He had a very 
happy birthday!

Brayden's FIRST BIRTHDAY!

We wanted to have a really fun birthday for Brayden. In fact, I started planning it in October.

Naturally, I took to Pinterest to find the best ideas for the party. Like his cake, which was really easy to make and turned out super-cute!


We set up balloons on an empty wall and let everyone that came get a chance at a photo (with or without the birthday boy. Hey, family photo-ops can be far and few between!).


I just loved how ours turned out!


The layout. We had sandwiches, veggies and chips, with a TON of candies in all the dishes!


Come time for cake, daddy got to give it to him.
Hey, someone has to take photos, right?


At first, he was very gentle with the cake.


Daddy showed him how to dig into it.
And boy, did he dig into it.


He really loved the cake! 


Overall he had a fantastic birthday! Thanks to all our family that came to celebrate with us!

Crockpot Chicken / Rice Bowls Recipe






I wanted to go to Rumbi's, REALLY badly, but honestly, didn't want to spend the money, or the time. Eating out with a little one is hard! So, I decided to do my own version of one! 

What You'll Need: 
2 Chicken Breasts
1 can pineapple chunks
1 cup brown sugar
1/2 cup soy sauce

Mix these into the crockpot and cook on low for 8 hours. For better flavor, only put in half the can of pineapple at first (aim for using mostly the juice) and adding the chunks in about 30 minutes before you serve.


Remove chicken from crockpot once cooked. Shred. Cook rice and add veggies (I used my rice maker and  a frozen bag of veggies for another level of laziness!) and serve while still warm!
The juice from the crockpot works PERFECTLY as your sauce, if you need it!

There you have it, a lazy-day dinner that looks like you busted your butt to make. 
Your family will thank you.
